Acapulco, Feb 25 (Notimex) .- Concluded the VII National Meeting on Traditional Mexican Cuisine as a World Heritage Site, in which 60 delegates from the Conservatory of Mexican Gastronomic Culture (CCGM) made presentations of the cuisine of their states for a proposal that will deliver to UNESCO.

The Secretary of Culture in the state, Mauricio Leyva Castrejón accompanied by Gloria López Morales, President of the CCGM, closed the national meeting that for four days worked in the port, to place Mexican gastronomy in the global panorama.

It was informed that with the conclusions of the National Meeting on Traditional Mexican Cuisine, the annual report required by UNESCO will be prepared and will be delivered in May.

Delegates from 25 states, students, producers, local traditional cooks and academics participated over four days. Chef Javier Reynada, delegate of the Conservatory of Guerrero, announced the characteristics of traditional Guerrero cuisine through lectures, testimonies and tasting typical dishes from different regions.

The CCGM Competency Management Committee was formed before the National Council for Standardization and Certification of Labor Competences (CONOCER), which will certify the work competencies of traditional cooks.

The holder of culture in the state, Mauricio Leyva Castrejón pointed out that the certification of traditional cooks allows, from the formality of a scheme, that sometimes they demand ever more global formats.

It was proposed to the Conservatory of Gastronomic Cuisine that Guerrero is host to the next World Forum of Mexican Gastronomy.

In turn, Sol Rubin de la Borbolla, Technical Vice President of the Conservatory of Mexican Gastronomic Culture said that it will be in May when the report on traditional Mexican cuisine is presented to UNESCO and the commitment that Mexico has as a Cultural Heritage in its gastronomy. .
