Morelos in its celebrations of the Virgen de los Milagros and a miraculous recipe

Once again, her friend Paty Jiménez Pons, invites you to take a trip through the gastronomic tradition of Morelos, which is enriched by its patron saint festivities, communal celebrations, rites, customs and these celebrations that are born of extraordinary stories that have captivated the heart of our countrymen

With the enthusiasm and the whim, that the parties of the month of September offer us, we prepare the belly, for a world of flavors in festivities where the food is part of its identity, celebrations that in this month, give beginning, with the centennial evocation to the Virgen de los Milagros, in Tlaltenango; that continue with the tradition and representation of the Reto del Tepozteco, a unique piece of traditional peasant theater of centuries-old tradition. Gastronomy that is consented in the National Holidays on September 15 and 16, where the Toma de la Alhóndiga de Granaditas in Tetelpa, municipality of Zacatepec is the funniest and most beautiful celebration in Morelos, which continues with the first offering of dead people in the state , yes to the surprise of many, our offerings of the dead begin on September 28, and finally the festivities septembrinas culminate with the fight of San Miguel Arcángel against Satan, during the night of the crossings of pericón and the wonderful elotes.

Today we will talk about the largest fair in the municipality of Cuernavaca, the Celebration of the appearance of the Virgen de los Milagros de Tlaltenango, north of the city, whose indigenous name was Zacango Tultenanco, where Hernán Cortés established the first sugar mill in America and the first Temple of Morelos, dedicated to San José.

For 220 years, thousands of pilgrims from Morelos, the State of Mexico and the Federal District have arrived at the feet of the Virgen de los Milagros, from the last days of August to September 9, for the religious celebration and the many attractions that there they develop.

Legend has it that in May of 1720, young people finely dressed and very beautiful arrived carrying a small chest well trimmed; When they found a wrong atmosphere in the inn, they were received in the guest house of Dona Agustina Andrade, where they were accepted with great attention. The next morning the young men asked the landlady to keep her valuable chest locked until her return. After spending a good time and young people did not return, the chest gave extraordinary samples of its wonderful content. Music, lights and a wonderful perfume emanated from the cracks. Before this, the woman decided to call the authorities: The religious, Fray Pedro de Arana and the civil authority, the Mayor of Cuernavaca, who opened the chest being amazed by its content: a beautiful image of the Virgin Mary.

On August 30, 1720, the image that was carried in procession, surrounded by lights, to the church of San José to be stored in its sacristy, where the pastor announced the happy arrival of the Virgin of Tlaltenango, as it is known today . From that day, his appearance is solemnized with the largest fair in Cuernavaca, where he is also celebrated as the Virgin of Miracles.

From this area north of Cuernavaca I have brought you the recipe for mushroom and mushroom broth, which is also consumed during this festival because it is seasonal and where gastronomy is one of its most important attractions.

It is a recipe, delicious and as I have been told, miraculous in cases of severe flu.

INGREDIENTS
(For six people)
¼ kg. From mushrooms, hogs or mushrooms filleted along their meat
¼ kg of mushrooms clavitos or mushrooms
3 finely sliced ​​zucchini
1/2 onion filleted
3 sliced ​​epazote twigs
1 large spoonful of wheat flour
1 large spoonful of oil and 1 liter of chicken broth
Salt to taste

Sauté all the ingredients together, moving carefully, when the onion is transparent, add the tablespoon of flour little by little and let it mix with the unleavened vegetables, add the chicken broth, taste the seasoning and if necessary add a little Salt and leave to boil for a few minutes until the ears, mushrooms and zucchini are soft.
